Squash Soup in Pumpkin Bowls

Ingredients:
Bowls: 4 small baking pumpkins, 2 tsp sugar, kosher salt
Soup: 3 tbsp unsalted butter, 1/2 small onion (chopped), kosher salt, 2 sprigs of thyme, 1 medium butternut or kuri squash, 1 tsp sugar, 3 tbsp heavy cream, ground pepper
Toppings: Pepitas, sourdough croutons, paprika, crispy prosciutto or bacon, fried onions, fried sage or parsley leaves
